I really love to cook and happen to be vegan so I plan to do a lot of meal prep in china, Should produce always be de-skinned, or for items like greens or peppers would simply washing them thoroughly in distilled water suffice? Are the precautions different when buying from a grocery store vs a street vendor?

I feel a little better because it reminds me of the grocery stores I went to in Japan when I studied there. I'm wondering if anyone knows if Chinese grocery stores have like ready made lunches or food that's cooked there, like you might find in a lowes or Harris Teeter stateside. Just in case you don't want to cook riiiiiiight when you get home.
